Thornæs Sonoma Peat - The Uncharted Series, 4 YO, 47%

My first ever review of a whisky from Danish distillery Thornæs Destilleri. They were established and started producing single malt whisky in 2018.

The bottles making up the Thornæs Sonoma Peat were filled 2020-12-02, matured in 1st fill ex-bourbon quarter casks, and bottled 2025-01-23. Limited to 490 bottles. This whisky was made using Danish and Belgian malted organic barley.

Nose: Deep notes of caramel. Then vanilla ice cream. Over time the caramel morphs into salted caramel. Also notes of nuts, malt and wood smoke.

Taste: Medium body. Peppery and a little rough up front. Vanilla, mint and hints of menthol. Wood smoke and a light oakiness.

Finish: Medium long finish. The oakiness is more pronounced now, but not overwhelming. Mint, menthol and green oakiness. Peppery wood smoke.

Comment: I get it, and I see promise.
