Sall Distillery Edition Three, 3 YO, 61.7%

OK, then. Time to try a new release from Sall Whisky Distillery, Denmark. This one has the fun subtitle “Pale Vienna & Pedro”. This of course refers to the use of pale malt and Vienna malt, and maturation in a single ex-Pedro Ximènez sherry hogshead. Limited to 210 bottles. See the official product page for more details.

Nose: Light, sugary and fruity on the nose. Sure, there are dried fruits here, but not a heavy PX-nose. With time malt, chocolate covered marzipan, and - darker notes of dried fruits.

Taste: Full bodied enough for this and the next dram. A little rough around the edges, but hey - considering the age and the ABV this is super smooth. White pepper, marzipan, ginger and cinnamon. Dried fruits in the background.

Finish: Medium long finish. More of the same - this is rather intense - in a good way. Distinct notes of floral honey towards the end.

Comment: Intense and enjoyable!
