Kilchoman Bourbon Matured Single Cask 726/2012, 8 YO, 55.4 %

Here’s are some old, almost forgotten, tasting notes on a Kilchoman I recently found in my files. Distilled 2012-11-08, matured in a single ex-bourbon cask (cask 726/2012), and bottled 2021-02-25.

Nose: Freshly baked bread with a delicious crust served with a rare steak just off the barbecue. In the background a pine wood forest is on fire. A horde is throwing copious amounts of tropical fruits on the massive fire, while off on the side a dark figure is happily warming his marshmallows over the roaring flames.

Taste: Medium to full body. Tropical fruits and vanilla over a peaty and mildly meaty base. White pepper and ginger.

Finish: Medium to short finish. Drier now and it really does die off a bit too soon.

Comment: The palate sadly fails to fully live up to the huge promises made by the nose.
