On the February 21 2020, a lifetime ago, just before covid-19 struck, Kilchoman Distillery on Islay celebrated the opening of their new still house and visitor centre. They released a special bottling for the occasion, the Kilchoman 11 YO Still House & Visitor Centre Opening. This is a single cask release, and only 220 bottles exist (or I should say existed).

Nose: Dry-ish in character. Earthy and meaty. The peat is present, but not overly so at first. Dry, smoked bacon straight on the grill, with a splash of pepper sauce. Vanilla and a pinch of salt. With time more fruitiness in the background, also red berries.

Taste: Full bodied, rich and dry in character. Lots of pepper and meaty peat at first. Then a surprising wave of light fruitiness and sugary sweetness. Then another wave - vegetal this time.

Finish: Medium long finish. Pepper, smoked meat, earthy cinnamon, vanilla, toasted oak, and assorted nuts. Softly briny in the end.

Comment: Whoa! That’s it, right there!
