This is the first core range product from Dingle Distillery, Ireland. The distillery was established 2012, and this whiskey was released 2021, which means the oldest possible components in this whiskey could be 9 YO, but my bet is is mainly composed of whiskey in the range of 5-7 years old.

“The first core range release of Dingle whiskey. This is a triple distilled single malt and has been vatted exclusively from first fill casks. The make-up of those selected is 61% Pedro Ximenez sherry casks and 39% Bourbon barrels.”

Available in the UK at around GBP 50.

Nose: Quite a citrusy delivery - lime and lemon zest. Softly herbal. Vanilla and hints of cinnamon. With time also marzipan and milk chocolate.

Taste: Medium body and sweetness. Chocolate and coffee - then honey and sweet licorice. Creamy vanilla.

Finish: Medium long finish. Cacao nibs with a light citrus notes playing in the background. Dry in the end.

Comment: A pleasant first encounter with Dingle.
