This time I have tried a rum finished single malt whisky from Danish distillery Fary Lochan. The Fary Lochan Rum Edition Batch #2 was distilled 2012-11-21 and 2012-11-30 (two casks), and bottled 2020-02-06. The outturn was 635 large bottles (50 cl) and 450 miniatures (5 cl).

This whisky was initial maturation for 4 years in two ex-bourbon barrels (casks 2012-17 and 2012-18), then finished for 3.5 years in two ex-rum casks. Maybe not so much a finish as a double maturation really.

This is an unpeated whisky.

Nose: Light and fruity with a sugary sweetness to it. Ripe apples and racked warehouse. With time aniseed, and cool, crisp notes of vanilla beans.

Taste: Full bodied and big in style. Lots of spices up front - white and black pepper as well as more exotic spices. Unsalted peanuts.

Finish: Medium long finish. Remains quite fruity. White pepper and milk chocolate. Surprisingly “unsweet”, but right at the end there’s white sugar notes. Dry-ish towards the end.

Comment: Another fine release from Fary Lochan.
