Kilchoman 2011 5 YO Sauternes Cask Matured, 50 %

This is a limited release from 2016; I just happened to have a few samples of Kilchoman in queue. 6000 bottles released.

This whisky was matured in Château d’Yquem Sauternes Casks.

Nose: Light and playful fruity top notes over meaty and peaty base notes. Big and bold Kilchoman kissed by sublime Sauternes casks from Château d’Yquem. I can dig this. Rich and complex nose.

Taste: Full bodied and full on meaty peat on the palate. The Sauternes casks do get to play here as well. Not as fruity now - leaning more towards sweet licorice, white pepper and vanilla. The

Finish: Medium long finish. Drier now - and a little dirty. Chocolate, licorice, raw meat, broth and stewed orchard fruits.

Comment: I remain a fan of Sauternes casks and peat. It works!
